Grandma's chocolate cake


Chocolate Cake with Brown Sugar Frosting In Memory of Doris Threadgold

¼ cup buttermilk
¼ cup shortening
2 cup sugar
2 eggs
2 cup flour
¾ cup cocoa
¾ cup boiling water
1 ½ teaspoon baking soda
1 cup buttermilk
1 teaspoon vanilla

Cream butter, shortening, and sugar. Add eggs. Mix cocoa and water and add to other mixture. Add flour, soda, buttermilk, and vanilla. Bake in 9 X 13 inch pan at 350 degrees for 45 minutes.

Frosting
3 cups brown sugar
1 tablespoon corn syrup
1 cup cream

Boil to soft ball. Cool and beat. Takes a lot of beating. 

Kathie made this for Donald's birthday.  It seems like when somebody is not at their own house they can not find the recipe so I will put it on the blog.

Pumpkin Cream Cupcakes

l pkg. spice cake mix ( 2-layer size)
l pkg. (3.4oz.) Vanilla Instant Pudding
l cup canned pumpkin
l pkg. (8 oz.) cream cheese, softened
1/4 cup sugar
l egg

Heat oven to 350.

Prepare cake as directed pn package.  Add dry pudding mix and pumpkin; mix well.  Spoon into 24 paper lined muffin cups.

Beat cream cheese with mixer until creamy.  Blend in sugar and egg; spoon over batter. Swirl gently with small spoon.

Bake 18-22 minutes or until toothpick insesrted in center comes out clean.  Cool 5 minutes ; remove to wire racks. Cool completely.

Extra special:  Stir 1/4 tsp. nutmeg into l l/2 cups thawed Cool Whip; spread over cooled cupcakes.  Keep refrigerated.
